On some of the packaged excursions we´ve been on (Angel Falls, amazon) the vegetarians basically get the regular meal minus the meat, which makes them kind of uninspired, but there are definitely vegetarian restaurants listed in our travel book in all the bigger cities, and the street food usually has some kind of vegetarian option (like cheese-filled empanadas instead of meat).
